Chocolate Cupcake Ingredients
Step 1: Preheat oven to 180 °C. Prepare your cupcake tin by placing each cupcake liner into the tray.
Step 2: Cream your butter & sugar using an electric mixer on medium speed until its light & fluffy. Add the vanilla, milk & eggs & mix on a slow speed for 1 minute. Sift flour, baking powder & cocoa powder into the mixing bowl. Beat on a low speed with an electric mixer until all the ingredients are combined.
Step 3: Half fill each cupcake liner with the mixture, a simple way of doing this is with a ice cream scoop that will help to get every cupcake to be the same size. Place tray into oven for 15-18 minutes (or until cooked) for 12 hole muffin pan or 10-12 minutes for mini muffin pan.
Step 4: Once cooked stand for 5 minutes and then turn out onto wire rack to cool before decorating.
Step 1: To prepare the icing, beat the butter on a low speed with an electric mixer until its light and fluffy. Slowly add the icing sugar to the butter, mixing as you go until it’s all well combined, add the vanilla & using the blue food colouring add a few small drops until you get to the colour you desire, continue mixing as your adding the food colouring.
Step 2: Using a medium size piping bag and a star piping nib to decorate the cupcakes. Fill the piping bag with your icing mixture, pipe the icing evenly over each cupcakes in a swirl motion.
Step 3: Using the white chocolate buttons and the milk or dark chocolate chips to make cookie monsters eyes, simply melt a small amount of the milk or dark chocolate button & then place the chocolate chip in the middle (or slightly off centre) of the white chocolate button to create the eyeballs. Place the eyeballs into the iced cupcake & then press a chocolate chip cookie into the icing to complete the Cookie Monster cupcakes.
